After 55 weeks of ripening, Fonkel gains even more bite. The flavour is full, powerful and pronounced, and you can clearly see and taste the ripening crystals. Even so, this Fonkel stays well rounded. A true all-rounder: easy to grate over all kinds of dishes and a treat on bread and on the cheese board.
Fonkel is cheese that shines in flavour and character. You can taste the weeks of ripening: from 36 weeks Extra Mature to 55 weeks Old and 100 weeks Extra Old. The cheese masters look, feel, smell and taste. Only when flavour and texture truly shine may the cheese be called Fonkel.
