Fonkel Extra Mature has ripened for 36 weeks on wooden boards. In that time the cheese develops a complex flavour: slightly sweet and nutty, with the first ripening crystals that give a tingle on the tongue. Full of character, yet approachable. Fonkel 36 weeks is a star on bread, on a burger and on the cheese board.
Fonkel is cheese that shines in flavour and character. You can taste the weeks of ripening: from 36 weeks Extra Mature to 55 weeks Old and 100 weeks Extra Old. The cheese masters look, feel, smell and taste. Only when flavour and texture truly shine may the cheese be called Fonkel.
