(Mini) quesadillas

What do you need?

Tortillas are the base. Small or large makes no difference to the taste, but for children a small one can be just enough, and they are also a little easier to handle in the pan. Children often enjoy eating things that are more their size, certainly when you are eating a larger one yourself. For the photos we used larger tortillas, because those were still in our cupboard. That is exactly the nice thing about quesadillas: you can easily use up leftover ingredients.

There are a great many things that go well with cheese. Our personal favourite is spinach, sliced mushrooms and minced turkey or pieces of chicken. A fried onion is also delicious, or pepper. Because the dish is fried in the pan and the ingredients are smothered in cheese, you can work all sorts of healthy vegetables into it without children necessarily noticing.

If children get a say in what goes into their quesadilla, it is also fun to involve them in the cutting. Children can often cut mushrooms and the like very safely with a table knife. Do keep an eye on things, of course.

The cheese

When it comes to the cheese, this time we recommend ONZE KAAZ jong belegen 48+. A young matured cheese still melts well and has just that lovely developed taste that works so beautifully with the other ingredients. Grate the cheese for easy handling. This is a job for the grown ups among us.

The preparation

Use a frying pan that does not stick easily and pour in a little olive oil. Spread it over the pan as evenly as you can. Warm the pan briefly over medium heat and lay one of the tortillas in the pan. Spread a layer of grated cheese over the tortilla.

The other ingredients go on top of that. Keep in mind that this becomes a sort of toastie that still has to be turned over, so do not make the whole thing too heavy. Finish with a little more grated cheese. Lay another tortilla on top.

After a moment, check carefully with a spatula whether the bottom tortilla has taken on a soft brown colour. As soon as it has, it is ready to turn.

Cut the quesadillas so they are easier to eat.
